Another way you can incorporate watermelon grind in your diet is by blending it in your blender and then adding the mash into your favorite juices and shakes.

Watermelon Rinds Jam Recipe

Ingredients:

  • 3 cups watermelon rind
  • 1 ½ cups sugar or natural sweetener (optional)
  • 4-5 strips of lemon peel
  • ¼ cup lemon juice
  • 1 vanilla bean, split in half lengthways, seeds scraped
  • 1 cinnamon stick
  • 2 cloves

Preparation:

Remove the green skin from the watermelon rinds and then chop, then chop them to ½ inch cubes. Put the watermelon cubes in a saucepan and add sugar (natural sweetener). Your saucepan should be filled with 2 parts fruit and 1 part sugar. Leave them overnight at room temperature. The next day, put the saucepan on the stove and set it to simmer. Stir to dissolve the sugar and add the other ingredients. Simmer for 2 hours with a cover and remove the cover for the last 15 minutes. While the jam is still hot, ladle it into sterilized jars and then tighten lid.
