No Bake Gluten Free Vegan Pistachio Cookies

The main ingredient in this recipe is pistachios and they’re rich in good fats, antioxidants, protein and iron. The rolled oats and shredded coconuts will give you those extra fibers you need. And the best part is, the cookies are gluten free, vegan and you don’t need to bake them.



For the Cookies:
  • 1 cup pistachios
  • ½ cup unsweetened shredded coconut
  • ½ cup gluten-free rolled oats
  • 2 tbsp. maple syrup
  • 1 tbsp. Moringa powder
  • 1-2 tbsp. water
  • 1 tbsp. vanilla extract
For the Filling:
  • 1 cup unsweetened shredded coconut
  • ½ cup raw cashews
  • ¼ cup gluten-free rolled oats
  • 2 tbsp. almond butter
  • 1 tbsp. vanilla
  • 1 tbsp. melted coconut oil


Put all the cookie ingredients in your food processor, pulse until all ingredients are combined. Put the mixture between 2 pieces of plastic wrap and roll the dough with a rolling pin until it’s ½ inch thick. Take a round cookie cutter and cut your cookies. Put the cut cookies in your fridge for about 15 minutes.

Put the filling ingredients in your food processor and pulse until the ingredients are smooth. Take the cookies out of the fridge and put 1-2 tbsp. of the filling and place another cookie on top so you get a cookie sandwich.
