Lemon Berry Frozen Yogurt Recipe

For this lemon berry frozen yogurt recipe is best to use organic berries and lemon.

Ingredients:

  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest (grated)
  • One package unflavored powdered gelatin (¼ -ounce)
  • ⅔ cup honey
  • ¼ cup light corn syrup
  • 2 cups plain whole-milk yogurt
  • ½ cup cream
  • ¾ cup blueberries
  • 2 tsp water

Preparation:

Servings: 5 cups

Total time: 1 hour and 30 minutes, plus 4 hours freezing

Fill a big bowl with ice water. Pour 2 tbsp of the fresh lemon juice into a smaller bowl. Sprinkle the gelatin over the lemon juice and leave it for 5 minutes.

In a saucepan, whisk the remaining tbsp of lemon juice with half of the ⅔ cup honey and ¼ corn syrup. Boil the mixture on moderate heat for 1 minute. Remove from the heat and stir in the lemon gelatin.

Then, in a bowl, mix the yogurt with the grated lemon zest. Stir in the lemon juice mixture, then whisk in the cream. Set the yogurt base in the ice water and leave it for 20 minutes to cool. Stir occasionally.

In a saucepan, mix the blueberries with the other half of ⅔ cup honey and the water. Cook on  moderate heat for 4 minutes. Then, leave it to cool.

Pour the yogurt into an ice cream maker, then freeze it.

Add the yogurt and blueberry sauce into a plastic container and close with an appropriate airtight lid. Freeze until firm, for about 4 hours.
