Zucchini and Grated Sweet Potato Bread Recipe for Balanced Blood Sugar Levels

Ingredients:

  • 1 finely chopped brown onion
  • 2 crushed garlic cloves
  • 1 tbsp. dried rosemary
  • grated zucchini
  • peeled and grated sweet potato
  • 1 tbsp. baking powder
  • sea salt and cracked black pepper
  • 5 lightly beaten eggs
  • ¼ cup nutritional yeast or organic cheese
  • Cherry tomatoes to top

Preparation:

Preheat your oven to 200°C. Line your baking dish with paper. In a large bowl, mix the zucchini, sweet potato, almond meal, rosemary, nutritional yeast (or organic cheese) and salt and pepper. Mix the ingredients well and then add the beaten eggs. Spread the dough on your baking pan and bake for 40-50 minutes. Enjoy your tasty and healthy bread!
