The Best Winter Recipe: Delicious and Vegan Lentil Stew

Winter is here and there’s nothing better than a bowl of warm stew during a cold winter’s day. If you’re tired of the same old chicken and beef stew, then you should definitely try our delicious and vegan lentil stew. The perfect mixture of herbs and veggies creates a flavorful and rich stew that will simply warm your heart and belly.


  • 1 yellow onion
  • 2 tbsp. olive oil
  • 4 cloves garlic
  • 4 carrots
  • 4 stalks celery
  • 2 lbs potatoes
  • 1 cup brown lentils
  • 1 tsp. dried rosemary
  • ½ tsp. dried thyme
  • 2 tbsp. Dijon mustard
  • 1 ½ soy sauce
  • 1 tbsp. brown sugar
  • 6 cups vegetable broth
  • 1 cup frozen peas


Mince the garlic, dice the onions and add them to a large soup pot. Add some olive oil and let them saute. Dice the celery and add it to the pot. Add the carrots and continue to saute. As everything is sauteing, peel the potatoes and cut them in small cubes. Add the potatoes in the pot. Add the lentils, thyme, brown sugar, soy sauce, rosemary and vegetable broth into the pan. Stir the ingredients. Once the potatoes get very soft, mash them a bit. This will make your stew thicker. After 30 minutes of cooking, add the frozen peas and let them cook for 5 minutes. Serve the stew hot and enjoy!
