Ingredients:
  • 2 butter
  • 1 onion
  • 2 celery stalks
  • 2 carrots
  • 1 whole head of garlic plus 3 extra cloves
  • 1 ½ quarts chicken stock
  • 1 thyme plus extra to finish
  • Some diced chicken
  • chopped leafy greens or other vegetables as desired
  • some vinegar or lemon juice
  • sea salt and pepper to taste
Preparation:

Melt the butter in your oven over medium-low heat. Add the celery, carrots, diced onions and some sea salt. Saute for 5 minutes. Chop all the garlic, but set aside 3 garlic cloves. Add the garlic to the vegetable mixture, sauté for 1 minute, add the stock, thyme and leafy greens. Bring them to boil, turn the heat down and let it simmer for 10 minutes.

Add the cooked chicken, some vinegar or lemon juice and season the soup with salt and pepper.
