- 2 lb. lean ground beef
- 1 small minced onion
- 1 small minced stalk celery
- 1 small minced carrot, minced
- 1 c. finely ground bread crumbs
- 1/2 c. Honey and mustard dipping sauce (divided)
- 1/4 c. freshly chopped parsley
- 2 large eggs
- 1/2 tsp. garlic powder
- 1 tbsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 12 -14 thinly sliced bacon
First, preheat the oven to 375°. Take a large bowl and mix the ground beef, onion, celery, carrot, bread crumbs, ¼ cup of the honey and mustard sauce, parsley, eggs, garlic powder, kosher salt, and pepper. Mix everything well. Don’t use any tools to combine the mixture, you can do it with your hands.
Transfer mixture to a 9″-x-13″ baking dish and form into a 6″-x-12″ loaf in the center of the dish. Then, arrange 6-7 slices of bacon across the loaf and weave remaining 6-7 slices over and under each other in a crisscross formation. Tuck in overhanging bacon ends below the loaf. Put some of the remaining honey and mustard sauce over the meat loaf.
Cook the meat loaf until the bacon slices become crispy and beef is well cooked. Glaze with more honey and mustard sauce every 20 to 30 minutes while cooking for about 1 hour and 20 minutes total.
Let the meat loaf cool off and cut it in bigger slices. Serve and enjoy!
