The Perfect Breakfast: Blueberry, Apricot and Almond Muffins

Start your day with these delicious, easy-to make muffins and feel satisfied throughout the day.

Here is how to prepare blueberry, apricot and almonds muffins:


  • 3 tbsp. chopped, soft dried apricots
  • 200 gr. wholemeal self-rising flour
  • 50 gr. ground almonds
  • ½ tsp. baking powder
  • 2 eggs
  • 100 ml fat-free yogurt
  • 100 gr. smooth almond butter
  • 2 mashed bananas
  • 75 gr. blueberries
  • Some rolled oats


Preheat your oven to 180C. Place the dried apricots in your blender. Add 4 tbsp boiling water and blend. In a large bowl, place the flour, ground almonds, baking powder and mix. Add the eggs, almond butter, yogurt, bananas and the blended apricots. Mix and then add the blueberries.

Line your muffin tray and add the batter. Sprinkle some oats on top of every muffin and bake for 25 minutes. Enjoy!
