No-Bake Two-Layer Homemade Chocolate Pudding Recipe

Here is what you need to prepare the homemade chocolate pudding featuring raspberry and chocolate layer:

Ingredients for 6 servings:

For the Raspberry Layer:

  • 3  oz Raspberry jello
  • 1  cup boiling water
  • 1/2  cup cold water
  • 1 1/2 cups whipped cream

For the Chocolate Layer:

  • 1/2  cup half and half milk
  • 2  packets unflavored gelatin
  • 2  cups cold water
  • 1/2  cup unsweetened chocolate (chopped)
  • 2/3  cup granulated sugar

Instructions:

For the Raspberry pudding:

Prepare a muffin tin and 6 wine glass on the diagonal in the cups. In a medium bowl, add 1 cup of boiling water and gelatin and stir slowly until dissolved. Then, add the cold water and mix everything well. Put it in a refrigerator for about 5-10 minutes to cool until thick but not firm. Take it out and add whipped cream and mix well. Pour the mixture into each glass. Keep the glasses in position and slowly lift the tray and transfer to the fridge to chill for about 2 hours to set.

For the Chocolate pudding:

In a medium saucepan, add half and half milk. Sprinkle the gelatin on top and set aside for 2 minutes.

Add the cold water and whisk until mixed. Add the chocolate and granulated sugar. Cook the mixture for about 8-12 minutes over medium-low heat until it can coat the back of a spoon easily. Let it cool. Remove glasses from the fridge and pour the chocolate mixture into glasses and cover the raspberry layer. Chill for 1 hour until set before serving! You can garnish it with some more raspberries or mint.
