Low Calorie Casserole Recipes

If you’re one of those casserole lovers, but you’re worried about gaining weight, do not worry. We are offering you a way to really enjoy your favorite dish without worrying about your weight. These recipes will fit in your diet perfectly. They’re extremely healthy, they’re low in calories and they’re absolutely delicious.

Cauliflower Casserole



  • 1 head cauliflower, cut in large pieces
  • 2 cups low-fat sour cream
  • 1 and ½ cup shredded Cheddar cheese
  • 6 chopped green onions
  • 10 slices bacon-cooked and crumbled
  • ½ tbsp salt
  • 1/8 tbsp black pepper


Steam the cauliflower over boiling water until it tenders. Drain it well. Chop the cooked cauliflower into very small pieces. In a large bowl, mix the cauliflower with sour cream, salt, pepper, half of the chopped green onions, half of the Cheddar cheese, and half of the bacon. Put the mixture in a baking dish coated with non-stick cooking spray. Top with the remaining Cheddar cheese and with the remaining bacon. Bake at 350 degrees for 20 minutes.

Beet and Mushroom Casserole



  • 2 tbsp vegetable oil
  • 1 medium chopped onion
  • 3 tbsp all-purpose flour
  • 1 ¼ cup vegetable stock
  • 1 ½ lb peeled and chopped beet
  • 5 tbsp light cream
  • 2 tbsp creamed horseradish
  • 1 tbsp spicy mustard
  • 1 tbsp wine vinegar
  • 1 tbsp caraway seed
  • 2 tbsp butter
  • 8 oz. trimmed and sliced mushrooms
  • 3 tbsp fresh chopped parsley


Oil a round baking dish. Heat the oil in a large saucepan, add the onion and cook until it’s soft. Add the flour, remove it from the heat and add the stock while stirring. Return to the heat and cook until it thickens, then add creamed horseradish, mustard, the beets, cream, vinegar, and caraway seeds. Mix everything well. Cook on low for about 30 minutes, until the beets are soft. Put the beet mixture into the baking dish and spread the mushrooms over the beet mixture, cover the dish and bake for about 30 minutes. Garnish the dish with parsley.

Raspberry Oatmeal Casserole



  • 2 cups rolled oats
  • ⅓ cup brown sugar
  • 1 tbsp baking powder
  • 1 tbsp cinnamon
  • ½ tbsp salt
  • 1 cup chopped walnut
  • 1 cup raspberries
  • ½ cup milk chocolate chips
  • 2 cups milk
  • 1 large egg
  • 3 tbsp butter
  • 1 tbsp vanilla extract


Preheat oven to 375 degrees. Spray a baking dish with non-stick spray. Combine oats, cinnamon, salt, sugar, baking powder, half the walnuts, half the strawberries and half the chocolate in a large bowl. In another small bowl, whisk together the egg, milk, butter and vanilla extract. Put the dry ingredients to the baking dish. Top with remaining fruit, nuts, and chocolate. Pour the egg mixture into baking dish over the dry ingredients. Bake for 35 minutes.
