  • 1 and ¼ all-purpose flour
  • ¼ cup chopped walnuts (toasted)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ teaspoon salt
  • 1/8 tsp nutmeg (freshly ground)
  • Dash of ground cloves
  • Dash of ground ginger
  • ¼ cup brown sugar
  • ¾ cup low-fat buttermilk
  • 1 tbsp canola oil
  • 1 and ½ tsp vanilla extract
  • 2 large eggs (lightly beaten)
  • 2 cups finely grated carrot
  • Cooking spray
  • 3 tbsp butter
  • 2 tbsp honey


Servings: 6 (2 pancakes per one serving)

Weigh the flour into dry measuring cups and combine with the first 7 ingredients (through ginger) in a large bowl and whisk. Combine ¼ cup brown sugar and next 4 ingredients (through eggs). Then add sugar mixture to flour mixture, stirring well. Fold in 2 cups carrot.

Heat a large nonstick skillet at medium heat. Sprinkle the pan with cooking spray and add ¼ cup batter mounds onto pan. Cook for 2 minutes or until edges look cooked. Then turn pancakes over and cook 1 more minute. Combine butter and honey in a small bowl and serve with pancakes.

Whole-Wheat Blueberry Pancakes

  • ¾ cup multigrain pancake mix
