These incredibly delicious cakes are made with Greek yogurt and they are the perfect healthy snack. So hurry to the kitchen and prepare these tasty cakes that your family will adore.
- ½ cup plain Greek yogurt
- 2 tbsp. chia seeds
- 1 ½ tbsp. finely grated lemon zest
- 1 ½ cups all-purpose flour
- ¼ tsp. baking soda
- ¼ tsp. baking powder
- 1 tsp. salt
- 1 cup granulated sugar
- 1 stick unsalted butter
- 3 eggs
- 1 tsp. vanilla
- 1 cup confectioners’ sugar
- 3-4 tbsp. fresh lemon juice
Mix the chia seeds, yogurt and zest in a small bowl and set aside. In a medium bowl, whisk together the baking soda, flour, baking powder and salt. Preheat the oven to 350°. Line one cupcake pan with 1 dozen cupcake liners.
In a big mixing bowl, put the butter and granulated sugar and beat them with an electric mixer. Beat until they become fluffy. Keep the mixer on and add the vanilla extract and the eggs, one at a time. Decrease the speed and add the dry ingredients and the chia yogurt mixture.
Pour the batter into the liners and bake around 20 minutes.
To make the glaze, mix the confectioners’ sugar with fresh lemon juice. Pour the glaze over the cake and garnish with candied lemon slice.
