Caprese Pasta Salad Recipes

Treat yourself with a delicious caprese pasta salad at the comfort of your own home. Here are few simple recipes on how to make a fantastic caprese pasta salad.

Caprese Pasta Salad

Ingredients:

  • 2 cups of dried pasta (cooked as directed on the package)
  • 1 cups of grape tomatoes (quartered)
  • 1 container or 1 ball of fresh Mozzarella (cut in small cubes)
  • 1 cup of fresh basil (sliced into ribbons)
  • Salt and black pepper

FOR THE BALSAMIC VINAIGRETTE:

  • 2 cloves of fresh garlic (squeezed through a garlic press)
  • 1/3 cup balsamic vinegar
  • 3 tablespoons olive oil

Preparation:

Squeeze two cloves of garlic through a garlic press in a small bowl. Pour in  the balsamic vinegar and whisk everything. Continue to whisk while slowly, pouring in the three tablespoons of olive oil. Cook your pasta according to the package directions. Drain, then rinse with cold water. Put  the cold pasta in a bowl and then add  the quartered tomatoes, fresh mozzarella and  the basil ribbons.Season with salt and pepper. Drizzle with the balsamic vinaigrette.

Chicken Caprese Pasta Salad

Ingredients:

  • 3 grilled seasoned boneless skinless chicken breasts (cut into 1 inch pieces)
  • ½ lb. pasta
  • ½ cup olive oil
  • ¼ cup balsamic vinegar
  • 300 gr.cherry tomatoes (cut in half)
  • 100 gr. Mozerella cheese (cut into cubes)
  • 10 leaves of fresh basil (chopped)
  • 2 tbsp balsamic vinegar

Preparation:

Pre-heat  your oven to 250°C. Put the chicken, olive oil, balsamic vinegar and tomatoes in a zip top bag. Mix everything together and let it  marinade for 5 minutes. Pour chicken mixture onto a pan and cook for 10 minutes. Cook  your pasta according to package directions. Drain it and let it cool down. Once the  chicken mixture is done, pour it over the pasta. Add the fresh basil, cheese and 2 tbsp of balsamic vinegar. Serve and enjoy your meal.

Salmon Pasta Salad

Ingredients:

  • 1 package pasta, cooked and drained
  • 2 cups fully cooked salmon chunks or 1 can pink salmon (drained, bones and skin removed)
  • ½  cups cherry tomatoes (quartered)
  • 1 medium cucumber (quartered and sliced)
  • 1 small red onion (sliced)
  • ½ cup canola oil
  • ½ cup fresh lemon/lime juice
  • ½  teaspoons dill weed
  • 1 minced garlic clove
  • Salt and pepper
  • 1 head lettuce (torn)

Preparation:

Cook the pasta first. Drain it and let it cool down. Put the pasta, salmon, tomatoes, cucumber and the sliced onion in a large bowl. To make the dressing, combine the oil, lemon or lime juice, dill, garlic and a pinch of salt and pepper. Mix everything well. Pour your dressing over pasta. Cover and chill. To serve it, put the lettuce first on your plate and then put the pasta mixture over it. Add as much dressing as you like.
