Ingredients:
  • 200g well softened butter
  • 200g golden caster sugar
  • 100g ground almond
  • 100g self-raising flour
  • 1 tsp.baking powder
  • ½ tsp.almond extract or essence
  • 4 large eggs

For the filling:

  • ½ a 340g jar cherry conserve
  • 175g icing sugar
  • 5-6 tsp. water or lemon juice
  • 1 tbsp. ready-toasted flaked almonds
Preparation:

Preheat the oven to 180C. Butter and line the basis of 2 round sandwich tins. In a big mixing bowl add all cake ingredients and beat them with an electric beater. Beat until the ingredients get smooth. Divide the cake batter into the baking tins. Bake until the cake turns golden, around 30 minutes. Let the cake cool down a bit before taking the tip of the tins. Let the cake completely cool down. Once the cake is cool, put one sponge on a serving plate and spread it with cherry jam. Put the second sponge on top. Put the icing sugar in a bowl and add the lemon juice or some water. Mix until you get thick and smooth texture. Spread the icing evenly on top. Add some almond flakes on top and your dessert is ready!
