Low-Calorie Coconut and Vanilla Panna Cotta Recipe

This healthy Panna Cotta is a great dinner or Christmas dessert which is very easy and simple to make.

In this recipe the gelatin, which is used in traditional Panna Cotta is substituted with vegetarian gelatin known as Agar-Agar powder. It is used widely in Asia in desserts and other cooking and sets more firmly than gelatin even at room temperature. The powder comes from seaweed and is extremely low in calories. You can find it in Asian shops.

Here is what you need to prepare the Coconut and Vanilla Panna Cotta:

(Servings:6)

Ingredients:

  • 1½ cups (375 ml) soy milk
  • ½ cup (125 ml) light unsweetened coconut milk
  • 1 tbsp. honey or maple syrup
  • 1 tsp. vanilla bean extract
  • ¾ tsp. agar agar powder
  • 3 tsp. water

Preparation:

First heat the soy and coconut milk in a saucepan over medium heat until it starts to boil. Then, remove it and add the honey and vanilla. Stir the mixture.

Dissolve the agar agar powder in the 3 teaspoons of water. Then, slowly add the agar mixture to the soy milk mixture, while stirring until well combined.

Return saucepan to heat and cook for 3 minutes, stirring constantly.

Pour into 6 x ⅓-1/2 cup capacity ramekins and set aside for 2-3 hours or refrigerate overnight.

Top with any kind of fresh fruit and serve.
