Pasta Salad with Broccoli and Peanuts

Ingredients:

  • ½ pound whole-wheat pasta
  • 2 heads broccoli
  • 3 tbsp. vegetable oil
  • ½ tbsp. red pepper flakes
  • ¼ cup rice vinegar
  • 2 tbsp. peanut butter
  • 3 tbsp. soy sauce
  • 1/2 cup roasted and chopped peanuts

Preparation:

Cook the pasta first. With a vegetable peeler peel outer layer of the broccoli, thinly slice crosswise. Make them into bite-size pieces. Heat 1 tbsp. of oil in a large pan over medium heat. Add the pepper flakes, broccoli, and ¾ cup water. Cover the pan and cook until the broccoli is tender. Whisk together in a bowl the remaining 2 tbsp. oil, vinegar, peanut butter, and soy sauce until the mixture is smooth. Add the pasta, broccoli and peanuts.

White Bean and Avocado Sandwich

Ingredients:

  • 2 cans white beans- rinsed and drained
  • 2 tbsp. extra virgin olive oil
  • Juice of half a lemon
  • 8 slices multigrain toasted bread
  • 1 small thinly sliced red onion
  • 1 thinly cucumber
  • 2 thinly sliced avocados,
  • 5 ounces arugula or sprouts

Preparation:

In a bowl combine the beans, olive oil, and lemon juice. Mash them until it you get a paste. Season everything with salt and pepper. Spread the beans mixture on 4 slices of bread. Top with red onion, sliced cucumber, avocado, and arugula or sprouts. Your healthy sandwich is done!

Chicken and Eggs Salad

Ingredients:

  • 1 pound chicken breasts
  • 8 cups mixed salad greens
  • 1 tomato cut into pieces
  • ¼ cup light red wine vinaigrette
  • ¼ cup crumbled blue cheese
  • 3 peeled and chopped hard-cooked eggs

Preparation:

In a large pot with hot water add the chicken breasts and cook them for 20 min. After they’re cooled, chop them into bite-size pieces. Place the chicken, greens and tomatoes in a large serving bowl and pour vinaigrette over top. Mix the salad. Sprinkle each serving with blue cheese and eggs.
