Delicious White Wine Pasta Sauce

Creamy White Wine and Garlic Pasta

Ingredients:

  • 4 tbsp butter
  • 5 cloves of minced garlic
  • 1 bottle of dry,white wine
  • 1 lb fettuccine (broken in half)
  • ½ tsp salt
  • 6 ounces grated Parmesan
  • ¼ cup of heavy cream

Preparation:

Melt the butter in a large pot on medium heat. Add the garlic and fry it a little bit. Add the wine and then bring the pot to boil. Add the pasta and little bit of salt. Cook the pasta until it softens. Don’t drain the pasta because most of the water will absorb. When the pasta is fully cooked, add the cheese and cream. Stir until the cheese is melted. Serve it with cracked pepper or freshly chopped herbs.

Mushrooms and White Wine Pasta

Ingredients:

  • 25 g chopped, unsalted butter
  • 1 tbsp olive oil
  • ½ finely chopped onion
  • 1 clove of finely chopped garlic
  • 1 chopped Portobello mushroom
  • Salt
  • Freshly ground black pepper
  • 50ml of white wine
  • 50ml double cream
  • 1 tbsp chopped parsley
  • 150 g pasta, cooked al dente
  • 25 g pine nuts

Preparation:

Mix the olive oil and the butter in a frying pan. Add the garlic and onion and fry them until they’re soft. Add the mushroom and fry it until it softens. Season everything with salt and black pepper. Add the wine and cook everything until it’s reduced by half. Once it’s reduced, add the cream and after that the parsley.  Cook it for 5 more minutes and then toss the pasta through the sauce and sprinkle some pine nuts.

Shrimp Pasta with White Wine Sauce

Ingredients:

  • 1 pound cooked medium shrimps
  • ¼ cup heavy cream
  • 3 quarts water
  • 1 tbsp sea salt
  • 1 pound of long pasta
  • 3 tbsp olive oil
  • 2 medium shallots, chopped
  • 1 large clove of minced garlic
  • ½ tbsp. sea salt
  • ½ cup of dry white wine
  • 2 medium tomatoes, sliced lengthwise
  • Basil leaves to garnish

Preparation:

Bring the water to boil in a large pot. Once the water boils, add the salt and the pasta. Lower the heat and cook the pasta for around 7 minutes. Drain the pasta once it’s cooked.  In another pan, heat the olive oil. Add the shallots, garlic, and sea salt and fry it until it gets soft. Add the wine and stir. Grate the tomatoes into the pan, without the skin. Cook until the sauce is thickened. Add the pasta, shrimps and cream. Garnish everything with basil.
