The Best Recipe For Summer: Light Gazpacho Soup

As the heat tightens and we almost touch the summer, we are going to give you a recipe of light gazpacho soup. This recipe is without bread and with very little oil, so that you can enjoy a cool meal with a few calories.

Ingredients:

  • 6 medium red tomatoes
  • 1/2 green pepper
  • 1 small cucumber
  • 1 clove garlic
  • 1/2 liter of water
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon of vinegar
  • A little bit of salt

Preparation:

First, wash the veggies thoroughly. Peel the tomatoes and cut them into squares. Chop the green pepper and remove the seeds. Peel the garlic clove and cut it into quarters, and do the same thing with the cucumber.

Put all the ingredients in a blender. Add the vinegar, water and salt. Blend until the mixture is mixed.

Finally, strain the gazpacho through a Chinese strainer, add the olive oil, stir with a spoon, and add a little more water, vinegar or salt if you need it. Cover the container and refrigerate for at least 1 hour.

You can garnish the gazpacho soup a diced cucumber or a chopped hard boiled egg.
